⅓ Guyot with 3300 plants per hectare and ⅔ spurred cordon with 4000 plants per hectare

The system of pruning:

Hand pruning, green harvesting

Harvest: 

Manual harvesting into small baskets, from the second week of September, rapid transfer to the cellar for vinification.

Vinification: Soft pressing and destemming, temperature controlled alcoholic fermentation below 28°C with frequent pumping over and with a period of maceration of 10 days. Malolactic fermentation follows the alcoholic and takes places in stainless steel vats.
Ageing: 12 months in stainless steel vats and few months in French oak casks.
4-6 months refining in bottle.
Content per bottle:
750 ml.
Organoleptic profile: Red ruby colour, bright with purplish reflections; the flavour is fine, with subtle red fruit hints, nicely winy; the taste is dry, full bodied and persistent, with subtle red fruit flavours.
Serving advice, food pairing: Serve at a temperature of not less than 18° C; a good match to all red meats, excellent with game and cheeses.
Technical notes: Alcoholic content: 14 % vol.
It can be aged for several years
