⅓ Guyot with 3300 plants per hectare and ⅔ spurred cordon with 4000 plants per hectare

The system of pruning:

Hand pruning, green harvesting

Harvest: 

Manual harvesting into small baskets, from the second week of September, rapid transfer to the cellar for vinification.

Vinification: Soft pressing of whole grapes following in “white” fermentation at a maximum temperature of 20° C, than refrigeration at 0° C and filtering.
The Sangiovese and Canaiolo grapes pass just a brief period of contact between their skins and juice. When the typical colour has been achieved the wine is transferred into stainless steel tanks for further fermentation at controlled temperature.
Content per bottle:
4 months in stainless steel vats, 2 months refined in bottle.
Organoleptic profile: Dark rosé red coloured. The flavour is delicate and elegant. The taste fresh, lively.
Serving advice, food pairing: Recommended serving temperature: 12° C; white meat, fresh cheese, crustacean.
Technical notes: Alcoholic content: 13,5 % vol.
