| Vinification: |
Soft pressing of whole grapes following in “white” fermentation at a maximum temperature of 20° C, than refrigeration at 0° C and filtering.
The Sangiovese and Canaiolo grapes pass just a brief period of contact between their skins and juice. When the typical colour has been achieved the wine is transferred into stainless steel tanks for further fermentation at controlled temperature. |
