The manuring, pruning and manual picking operations carried out during the year, make it possible to obtain healthy, aromatic olives.

Method of harvesting: |
The olives are hand-picked directly from trees with the aid of combs which cause the drupes to fall into nets lain on the ground so that the olives don’t split or lose their organoleptic characteristics. They are then deposited in crates and transported to the olive mill. The olives pressing is made within 12-24 hours from the picking. The method of extraction is the cold pressing by means of a continuous screw press. We obtain an extra virgin olive oil of a superior quality, with incomparable distinctive features. It is stored in stainless steel tanks and bottled in the estate.
Thanks to its low acidity (0,12) it is ideal for dressing all kinds of dishes.
Ideal as a condiment. We recommend using it on roasted bread “bruschetta”. |
